How to prepare your Pork Rinds: Microwave, Oven Bake, Air Fry or Deep Fry Them!
Microwave:
Our serving size is 1 ounce (about 1/4 cup or one small handful). Pour the pork rind pellets into an ordinary microwave safe paper plate. Consider your first batch to be a test batch. This is because microwave ovens cook at different rates. Start with a time of 3 minutes and be sure to watch them puff through the glass in the front panel of the microwave appliance. When the pellets puff, stop the microwave and note the time it took so that you can use that time for future batches. If the pellets don't puff up all the way (it is common for 2 to 3 pellets to not cook all the way), your microwave may not be powerful enough or it may not be producing the amount of heat you need. We use a 1000 watt microwave in our test kitchen and have found that a 750 watt microwave will not cook pork rinds correctly. They don't make any noise as they puff up and you want to make sure you allow about 30 seconds to cool before eating since they will be more crunchy. Store the pork rind pellets at room tempearture since refrigeration may result in the pork rinds not cooking correctly.
How to Bake Microwave Pork Rinds:
Spread as many as you want to cook at one time on a cookie sheet. Preheat over to 450 degrees F. Place in oven and cook for 5 minutes, on the first batch pay close attention since this will be the time required to cook in your over. Once they have puffed remove the pork rinds and allow to cool.
COOKING WITH PORK RINDS (that's right, pork rinds aren't just for snacking anymore)
RECIPE: Kickin' Garlic Dill Meatballs
1 pound of ground chicken (or turkey)
½ pound ground pork
1 small onion, finely chopped
½ cup ground pork rinds (Chef Piggy Tail's Microwave Pork Rinds)**
1 package of Julia's Sassy Dip, Original
1 egg
2 garlic cloves, pressed
2 tablespoons chopped fresh dill
½ teaspoon salt
¼ teaspoon black pepper
DIRECTIONS:
Combine chicken, pork, onion, pork rinds**, egg, garlic, dill, Sassy dip, salt and pepper in a bowl and mix well. Roll into to 1 inch meatballs (will make approximately 70 meatballs). Place meatballs on baking sheet and place in oven under broiler. Broil for approximately 8 minutes. Remove from baking sheet and add to marinara sauce. Serve over pasta or as a meatball sub.
** On a paper plate, cook approximately 1 ounce of Chef Piggy Tail's Microwave Pork Rinds. Cool. Put cooled pork rinds into a ziplock bag and crush with rolling pin.
RECIPE: Squealing Good Chocolate Nuggets (tastes like chocolate rice krispy treats... really!)
8oz semi-sweet chocolate chips
3/4 cup natural peanut butter
5 oz microwave pork rinds, cooked and crushed
Directions
Melt together chocolate chips and peanut butter over low heat. Remove from heat and stir in crushed pork rinds. Spread into a 9×13 pan and chill until hardened. Cut into squares. Store in an airtight container in the refrigerator. No one will ever guess that it's microwave pork rinds.
RECIPE: Pork Rind Pizza Crust
3-4 ounces of microwave pork rinds, cooked and crushed
1/2 Cup shredded mozzarella cheese
1/4 Cup grated Parmesan cheese
3 eggs, beaten
Mix ingredients together. Spread in pan, top with your favorite pizza toppings and bake in 400 degree oven for 10-15 minutes.
